Chickpea Herb Salad

This vibrant chickpea salad is a nourishing, feel-good dish that’s as versatile as it is satisfying. Built on a base of protein-rich chickpeas, fresh vegetables, and detoxifying herbs, it works beautifully as a light meal or a flavorful side. Simple ingredients come together with bright citrus and olive oil to create a salad that supports balance, vitality, and everyday wellness.

Ingredients

  • 1 cup dried chickpeas, soaked overnight

  • Water, for cooking

  • 1 tablespoon sea salt

  • 1 small cucumber, chopped

  • 1 tomato, chopped

  • ½ red bell pepper, chopped

  • ½ yellow bell pepper, chopped

  • 1 bunch scallions or red onion, chopped

  • 1 cup feta or goat cheese (optional; omit for vegan)

  • Fresh herbs, chopped (parsley, dill, and/or cilantro)

Dressing

  • Organic olive oil

  • Fresh lemon juice

  • Sea salt, to taste

  • 1 drop maple syrup

Instructions

  1. After soaking the chickpeas overnight, drain and rinse them.

  2. Bring fresh water to a boil, add the sea salt, then add the chickpeas.

  3. Simmer until soft, about 45–60 minutes. Drain and allow to cool.

  4. Place the cooled chickpeas in a large bowl.

  5. Add the cucumber, tomato, bell peppers, scallions or onion, and cheese if using.

  6. Add the fresh herbs and gently toss to combine.

  7. Drizzle with olive oil and lemon juice, season with sea salt, and finish with a drop of maple syrup.

  8. Toss everything together and adjust seasoning to taste.
